Today we want to talk to you about one of the most special for lovers of good acorn-fed Iberian product, “The Montanera”.
It consists of the last phase of the Iberian pig rearing from October to February, which consists of letting the Iberian pigs graze freely through the holm oak meadows so that they feed on their great precious food “the acorn”, which then it will give that exquisite flavor to your meat. The acorn provides a high content of carbohydrates, the Iberian pig has enough energy and it becomes the famous fat so characteristic of these specimens. They also complete their diet with grass from the fields, providing that special aroma.
At Ibericos Crego we have our own livestock farm and we own a farm dedicated to raising Iberian pigs in Salamanca, which makes it easy to monitor our livestock throughout the process.
From this moment on, a careful selection is made of the best specimens for slaughter once they have reached the optimum weight.
Then we continue with the following steps of the process: slaughter, cutting, salting, washing, settling, and aging in our dryers, until the pieces are ready for direct sale to the consumer.
